The harvest process
The analysis of our oils demonstrates exceptional quality. This is because harvesting takes place the moment that the fruit is ripe, in early vintage. It is at this precise moment that the fragrances and flavours are achieved which distinguishes it from later vintage oils.
We pay the utmost care for the fruit does not suffer any harm from the time we collect it to moment of processing.
The oil press
Only thirty minutes away from the plantation, and is equipped with the latest machinery. The entire process is under the supervision of experts who have expensive experience in the production of excellent quality olive oil.
The EVOO is bottled with the most up to date machines in order to guarantee the maintenance of best quality, fragrances and features of the olive oil.
